On-the-go Freezer Breakfast Burritos

My chickens decided they would start laying eggs again after their relaxing, several months long vacation. There’s literally baskets and cartons of eggs just sitting around the house because I can’t fit any more in the fridge. If you’re in the same situation you might want to check out this recipe that will a) use up a ton of eggs and b) result in delicious, microwavable breakfast burritos!
This ended up making 8 large burritos. Next time I would definitely double or triple the recipe. Or you could make them into breakfast tacos on smaller tortillas!
RECIPE
Ingredients
- 1 dozen extra large eggs (I ended up using 14 eggs because I had some tiny ones)
- 1/2 cup milk
- 1/2 package of your favorite bacon
- 1 package burrito sized flour tortillas (8 ct)
- 1/2 cup salsa verde
- ~ 12 oz shredded cheddar or Mexican mix cheese.
- salt & pepper to taste
- Parchment paper
- Tape (I used paper washi tape)
I saw a lot of recipes out there that used aluminum foil to wrap the burritos, but that didn’t make a lot of sense to me since you have to microwave these. I decided to use parchment paper since it can be microwaved and also composted! I also used strips of japanese washi tape to seal the burrito wrappers shut since its made of natural fibers and I didn’t have any issues with it in the microwave. You could use regular tape and remove it before microwaving if you are worried about melting or weird tape chemicals.
1. Preheat a large non-stick skillet. I absolutely love T-Fal. Everything cooks super evenly and its non-stick coating can’t be beat. I hardly have to clean mine after use, I can pretty much just wipe food straight out of it. Check it out if you’re in the market for a good frying pan!!
2. Crack the eggs into a large bowl with 1/2 c of milk, salt, and pepper. Whisk until smooth. Put aside. Chop bacon into small, bite-sized pieces.
3. Cook bacon pieces until crisp. Once cooked, carefully drain out oil until 1 tbsp remains in pan with bacon. Add eggs to bacon + grease to cook.
4. Add 1/2 cup salsa verde to eggs as they are almost done cooking. Allow the eggs to absorb some of the salsa liquid so the burritos aren’t soggy later.
Let the egg, bacon, salsa mixture come to room temperature. If you can’t wait you can let it cool down a bit in the fridge before assembling.
5. While you’re waiting for the eggs to cool off a bit, cut or tear your parchment paper pieces. I ended up just using the awful razor thing on the parchment paper roll box. I made rectangles.
6. Once your eggs are room temp (or close), we can start assembling the burritos.
I have step by step photos of how I rolled + wrapped my burritos.
- Place tortilla on a sheet of parchment.
- Add a small, flat area of cheese to one end of the tortilla + place a couple of spoonfuls of egg on top of the cheese.
- Fold in sides of burrito and bottom.
- Begin to roll burrito, tucking in any tortilla edges that get away.
Then to wrap your tortilla, do the following:
- Place the burrito along the long edge of the parchment rectangle closest to you.
- Fold both sides in to middle of burrito.
- Roll, until you have a few inches left at top.
- Fold in top edge like a present so you have a triangle.
- Finish wrapping and seal triangle edge with tape.
I placed my burritos in a freezer bag, then stuck them into my freezer for when I need them.
To reheat a single burrito in the microwave: Put wrapped burrito on microwave safe plate, microwave 1.5 mins, flip burrito, microwave another 1.5 mins. (I have a fairly small, 700 watt microwave, so if your microwave is more powerful you might only have to do a minute per side.) Let the burrito sit for a minute or two.
I found these burritos to be super tasty, filling, and above all NOT SOGGY! I think letting the eggs cool down a bit and also making a layer of cheese to seal in the eggs inside the tortilla helped a lot.
This is a great way to meal prep and have a filling breakfast ready to go in the mornings. Dusty and I had been buying big packs of frozen breakfast burritos at Walmart and Costco, so I figured I should try and make my own. I love this so much better than a bowl of cereal… or nothing… in the morning! Enjoy!
